KATHY'S KORNER: Guacamole Dip

Lisa asked me to participate in the newsletter and knowing that my "Blogging For Dummies" book still sits unopened on my desk, she suggested that I share some of my favorite recipes. If there is a recipe for a dish that I have made in the past, that anyone has tried, let me know and I will feature it in another newsletter. This recipe is a family favorite that works great for lunch, dinner or bringing to a get together.
Guacamole Dip
2 ripe avocados
3 ounces of cream cheese, softened
6 ounces of sour cream
2 TBSP taco sauce (more for the tray)
Slice avocados in half, remove seed, mash avocados, add cream cheese, mix until smooth, add sour cream and taco sauce, spread on cookie sheet (makes about half of a cookie sheet). This can be refrigerated for a half an hour or so (my family can never wait and to be honest, neither can I).
Spread a layer of taco sauce over the "green stuff"
Add: Lettuce, Tomato, Shredded cheese.
Serve with tortilla chips.
You can add just about anything to this like jalapenos, olives, onion, etc. Enjoy!
